Conrad Gallagher unpacks

Michelin Star chef Conrad Gallagher has travelled the globe but he says coming back to Africa makes him more creative in the kitchen.
World-renowned for his culinary talents, he has worked in some of New Yorks' top hotels and restaurants, including The Waldorf=Astoria, The Plaza Hotel, Le Cirque and The Edwardian Room as well as Alain Ducasse's Louis XV at the Hôtel de Paris in Monte Carlo.
We chat to him about his journey with food.
GoTravel24.com: You’re a world-renowned Michelin Star chef, where in your opinion is the best place to have a gastronomic adventure?
Conrad Gallagher: "For the best Asian food - Japan or Vietnam, for Italian or French – Provence or Sicily
Culinary travel is taking off, most outstanding place you’ve travelled to cook or eat?
"Cambodia - I was brought there with eight top chefs from around world to do a cooking festival. They have the most exotic ingredients and the variety, freshness and combinations of flavours are amazing.
Favourite person you’ve cooked for and why?
"Nelson Mandela - He stands for so many great things and so many great causes. He is one of my idols and meeting him was a wonderful thing.
How do you handle bad service when on holiday?
"When I am holiday I try and avoid anything to do with aggravation. We get so chilled that we don’t get bothered about this.
Are you a bush baby, eco adventurer, extreme thrill-seeker, beach bandit, or five-star freak?
"I love the bush and wilderness - all the wonderful things in Africa. Going back to Africa makes me more creative in the kitchen.
Your favourite hangout in the global village is...
"A place called Hungry Monk in Greystones, Wicklow, Ireland.
Local is lekker when you find yourself in...
"Franschhoek.
Your travel nightmare would have to be...
"Taking a bus from Gugulethu to Swaziland.
Travelling in style is...
"The only way to travel.

"Spontaneous relaxation rebel.

"No.
Your ideal travel companion is...
"My wife and children.
